Will 15x8s fit on a 68 Firebird?

It depends on the backspacing.You need a lot of inboard backspacing like 5".I have a 69 camaro which is essentially the same and I am able to run 15x8 rally wheels on the rear only.They rub in front on tight turns.I run 7's on the front.If you want to handle well also try Koni classics all around.They  have widely adjustable dampening and work way better than gas shocks.This is also dependent on not having old tired springs.
